Sunflower Seeds

Rich in healthy fats omega-6 and monounsaturated, sunflower seeds taken with food gives you a satiating feeling even before you stomach is packed with food. Yes, it can prevent over-eating. This also reduces the C-reactive protein which causes inflammation. Zinc and Selenium gives an immune boost, vitamin B1 helps with digestion and is an energy booster. Linoleic acid relaxes blood vessels helping lower high blood pressure. Chlorogenic acid lowers blood sugar and can take six weeks of this to happen. Highest amount of phytosterols of the seeds, the heart health is helped by this wonderful seed. Vitamins E, B-complex and magnesium helps with bone elasticity and aids with joint health, in addition, its phosphorus content works with calcium

 

Sunflower Sour Cream

Recipe provided by Elder and Concert Piano-Organist, Raymond Ruckle

Ingredients:

  • 1 cup raw sunflower seeds, soaked overnight (pre-sprouted seeds, at least 2hrs soak to soften)

  • 1/2-1cup water

  • 1-2 tsbp fresh squeezed lemon juice (start with less)

  • 1 tsp onion powder

  • pinch unrefined salt (Celtic, Himalayan, Real), can add a little more to taste

  • blender or food processor

  • handful of dillweed

  • chopped chives

How to make:

  • Soaked sunflower seeds wash clean and drain

  • Place in blender with ½ cup water. Add all ingredients, except dill and chives.

  • Blend (watch not to overheat, stop and go as needed).

  • If needed, add small increments of water for creamy consistency.

  • Final lower power blend with some dill.

  • Let sit in fridge 20+minutes before serving

  • Optional: sprinkle chopped chives or chopped dill over the cream.

Cashew Sour Cream

Revive Ministries Recipe

Ingredients:

  • 1 cup raw cashews, at least 2hrs soak to soften

  • 1/2-1cup water (start with the smaller amount)

  • 1-2 tsbp fresh squeezed lemon juice (start with less)

  • 1 tsp onion powder

  • pinch unrefined salt (Celtic, Himalayan, Real), can add a little more to taste

  • blender or food processor

  • chopped chives

Soaked cashews, wash clean and drain:

  • Place in blender with ½ cup water. Add all ingredients except chives. Blend.

  • If needed, add small increments of water for creamy consistency.

  • Let sit in fridge 20+minutes before serving

  • Sprinkle chopped chives over the cream.
